Buy a Dexter Russell if you want a good dependable fillet knife. I bought a much more expensive Wustoff fillet knife prior to this. I should have saved my money, as this knife worked out better for me. I too was a commercial fisherman for over 20 years. That means you know how to catch fish, not necessarily process them, as most of the fish I sold were only gutted or sold whole. However, because I sold my fish I got to look inside the commercial processing plants of the larger fish buyers. The people that work there know more about filleting than anyone. Believe me- it is harder to fillet commercially than what the average person can produce. They leave a good looking fillet and with less fine bones- and they do it at high speed. You will always find Dexter Russell's at the top of the list of knives used. Now I have a selection of lengths and widths of Dexter Russell's (this is the longest) for different species of fish for my personal use. Just learn how to properly maintain it's edge (watch some YouTube videos if you don't know how) and you will be more than satisfied.

3Year Update - I see many comments about sharpness and rust. After three years usage and hundreds of fillets, they’re still the best. The 9 inch fillets and the 6 inch cuts bait. I use one dexter sheath for both. I dipped the handles in polyurethane to help preserve. Fresh water rinse and WD40 to clean. Can sharpen like new. Good luck.I'm a deckhand a large fishing boat. Have used this model for years on the fillet table (fluke, porgies, sea bass etc). Only brand I use. It's true that the blade develops a patina, but it always able to be sharpened. Best in the business.

A working knife that works. Most of the guides that I have fish with over 60 years use this knife or a very similar one and a somewhat coarse stone. They sharpen often. The carbon steel blade rusts but it also sharpens easily and is hard enough but also flexes the right amount. The wood grip works better than fish slime covered plastic, but in the end fish slime always wins.

I own a number of Dexter brand knives.I use this one to skin store bought fish either whole or cleaned. Care should be taken to clean and dry immediately after use.The flexibility of the blade lends itself to very close skinning.It holds an edge well and is easily sharpened. I use a Lansky dual rod sharpener which takes about 15 seconds to bring to razor edge.

Knife was very sharp upon receiving it . Used it on some trout and it was like slicing through butter. Very pleased. I do wish it had come with a sheath. Weird that a fillet knife would come without a sheath.

I give 5 stars for the quality of the blade, but the handle is softer wood than maybe should be in a knife handle. Really do need to oil or otherwise give the wood handle some sort of protective finish first chance you get. Blade is older style high carbon steel that tarnishes right away, and builds up to a sort of dark finish over time. I am pleased with the feel of the blade, which is to me the right balance between stiff and flexible. I think this knife is best for special work like ham slicing. The best jack-o-lantern carving blade ever.
